In just a few minutes, you can make refreshingly delicious and wonderfully nutritious blueberry smoothies with this simple blueberry smoothie recipe.
Vegan blueberry smoothies are a healthy and delicious breakfast option or a refreshing snack at any time.
Why are blueberries so beneficial to your health? In case you didn’t know, blueberries are high in antioxidants such as anthocyanin, which also gives them their distinctive dark blue-purple hue.
So, not only does a fresh blueberry smoothie taste delicious, but it also provides a boost of nutrients with each sip!
I add wheatgrass to my blueberry smoothie recipe to make it even more nutritious. This hearty ingredient adds a nice earthy flavour to smoothies and milkshakes while also providing a significant boost of fibre, essential minerals, and vitamins.
My favourite vegan smoothie with blueberries contains no added sugars and is made with coconut milk. You can, however, use any plant-based milk you prefer and add extra sweeteners if desired.
To make the drink sweeter, add unrefined cane sugar, honey, maple syrup, or an alternative sugar like palm jaggery or coconut sugar.

INGREDIENTS

• 1 cup fresh blueberries (fresh or frozen)
• 1 cup lite coconut milk (thin to medium) or preferred milk (dairy or vegan)
• 1/4 teaspoon vanilla extract or 1–2 drops vanilla essence
• 1–2 tablespoons raw sugar or any sweetener of your choice
• 6–7 wheatgrass strands- optional

PREPPING BLUEBERRIES

 1 cup blueberries, rinsed several times in water
 To remove pesticides, soak the blueberries in a bowl of water with 1 tablespoon of vinegar. White vinegar or even apple cider vinegar can also be used. Allow for a 15- to 20-minute soak.
 After that, rinse them several times more. Remove all of the water.

MAKING BLUEBERRY SMOOTHIE

 Put the blueberries in a blender.
 Mix in the lite coconut milk. You can also use almond milk, cashew milk, or dairy milk instead of water.
 Add the wheatgrass strands as well (optional).
 Pour in the vanilla extract or essence.
 Blend until completely smooth.
 Pour the vegan blueberry smoothie into a glass and serve immediately.

NOTES

Plant-based milk: Instead of coconut milk, try almond milk or cashew milk. You can also use plant-based yoghurt to make this smoothie. You can substitute dairy milk if you prefer.

Thicker smoothie: For a thicker and creamier smoothie, add some ice cubes or frozen blueberries. 1 to 2 bananas can be added for a thick, creamy blueberry banana smoothie.
Add 1 ripe avocado pulp for a creamy blueberry avocado smoothie.

Scaling: This blueberry smoothie recipe serves one, but you can easily double it or increase it as needed to make more servings.

Why not plan ahead of time? I recommend that you try this homemade smoothie as soon as possible. If you leave the smoothie to sit, it will lose its great consistency and will not taste as fresh and delicious.
