Khichdi is one of the most popular dishes among Indians. It is treated as the best remedy for health-related problems. A bowl of Khichdi with pickle and some salad is something which you can cook at any time and will provide you with all the nutrients required for your body.

Ingredients required for making Khichdi are: (SERVINGS – 4)
· 1/2 cup rice
· 1/4 cup Toor daal
· 2 tablespoon ghee
· 1 dash cinnamon
· 1/3 cup peas
· 1/2 cup potato
· 1 teaspoon ginger
· 1/4 cup moong dal
· 1 teaspoon cumin seeds
· 1/4 teaspoon asafoetida
· 1/2 teaspoon sugar
· 1/2 cup cauliflower
· 1 bay leaf
· 5 sprigs coriander leaves
Step 1- Dry roast the dal and wash the rice with water
Khichdi has always been a comfort food for many people. Making Khichdi is not that tough to make and you can prepare it at any time. All you need to do to prepare this dish is to take a frying pan and dry roast the dal in it over medium flame. When an aroma starts arising from the dal and they become slightly brown, remove it from the flame, and allow it to cool. Wash them properly and keep them aside. Now, once it’s done take a bowl and wash the rice in running water 5-6 times and soak it in water for half an hour.
Step 2- Fry potato and cauliflower in ghee
Now, take a pressure cooker and heat ghee in it on medium flame. Once the ghee is hot enough, you need to add the whole spices in it – bay leaf, asafoetida, cinnamon in ghee and fry them for a few seconds. Then, add ginger paste, turmeric, and sauté it for 2-3 minutes. Finally, add the cauliflower and potato along with salt and sugar. Stir well and cook for 2-3 minutes on medium to high flame. Once the vegetables are properly cooked, then add soaked rice in it along with the roasted dals. Mix well all the ingredients and cook for 5-6 minutes.
Step 3- Pressure cook the Khichdi
Then, add 3-4 cups of water to the rice and close the pressure cooker with its lid. Pressure cook for at least 3 whistles and turn off the flame. Allow the steam/pressure to release on its own then serve hot with ghee, pickle, papad, and raita.
Tips for making perfect Khichdi at home
- A well-made khichdi is protein-rich, delicious and healthy as well. And the best way to make it at home is to make it simple with fewer spices.
Try to use only cumin seeds, asafoetida, and turmeric while making the dish. - To make the khichdi more nutritious, you can add a little pearl millet to it. This would increase the taste of the khichdi.
- You can also add more veggies as per your taste for making khichdi more delicious and colourful.
- To make it healthy, you can use short-grain rice for making khichdi or even brown rice.
