If you love egg recipes then, this egg roll recipe is a must-try for you. With a combination of egg and vegetables, it can be prepared in less than an hour. It is super easy to cook and tasty as well. If you have sudden guests coming to your home and you don’t have much time, then this is a go-to recipe for all egg lovers. It’s a perfect dish to pack for the office, for road trips and picnics. You can add spices, sauces and vegetables according to your taste. Egg roll can be made in a variety of ways and here is the one which I’ve shared with you. So, do try this recipe out and amaze everyone with your cooking skills.

Ingredients required to prepare this dish are: (SERVING-4)

· 4 egg
· 2 medium onion
· 2 medium capsicums ( green pepper)
· 4 tablespoon tomato ketchup
· 2 carrot
· salt As required
· 2 chapati
· 1 teaspoon green chilli sauce
· 1 teaspoon lemon juice
· 1 tablespoon black pepper
· 4 teaspoon butter
· 2 inch ginger

The steps are as follows-

Step- 1 Saute and roast the filling for the egg roll

Egg roll can be prepared in very little time and is easy to cook as well. First, you have to take some onions, capsicum, carrots, and ginger. Then, cut thick slices of onions and capsicum, grate the carrots, mince the ginger and keep them aside. Now, take a frying pan or a tawa and put it over medium flame. Once it is pre-heated, add one tablespoon of butter and add the chopped vegetables which you kept aside. Then, cook on high flame for 2 to 3 minutes. Add some salt, pepper, tomato ketchup, chilli sauce, and lemon juice. Cook for another 1 to 2 minutes.

Step-2 Prepare the egg-chapati covering

Now, Take a bowl and break 2 eggs in it. Add some spices like pepper, oregano, and salt to taste. Whisk the batter properly. Then, take a pan and heat one tablespoon of butter in it and put half of the egg mixture and make an omelette. Now, make a chappati and put over it. Top it with the remaining egg mixture and flip on both sides so that it is properly cooked.

Repeat the same procedure to make one more roll.

Step-3 Add the filling & make the roll

Once the egg roll is done, then add the mixture of chopped vegetables at the centre of the chappati and turn it around to make a roll. Serve hot with green and red chutney.

Tips

  1. If you want to add some more toppings to your roll, then you can also add grated cheese to enhance its taste.
  2. To make the egg roll more healthy and tasty, you can replace your regular refined oil with healthier oil or low-fat butter.
  3. If you have problems such as high cholesterol, then just remove the yolk and whisk the egg whites to make the roll to avoid extra fats.
