Ingredients and Proportions, you Need:


• Virgin olive oil ½ cup
• Chopped jalapeno 2
• Yellow bell pepper ½
• Chicken broth 1 ¼ cup
• Green chili 1
• Garlic cloves 3
• Dark chocolate ½ cup
• Onion 3
• Salt to taste
• Powdered cinnamon ½ teaspoon
• Red bell pepper ½
• Green bell pepper ½
• Chicken 250 gram
• Peanut butter
• Diced tomatoes 1 cup
• Water 2 cups
• Cumin powder 1 teaspoon
• Chili powder 2 ½ tablespoon
• Rice 1 cup

The Way you can Make Chicken Mole and the Rice:

• Make the Sauce:
Take a pan. Over medium heat, heat 2 tablespoons olive oil. Once the oil gets hot, add chopped onions and sauté until it becomes soft. Now time to add chopped garlic and cumin powder, cinnamon powder, and chili powder, and for about 3-4minutes, sauté them. Once you get a nice fragrance of the spices, add chopped bell peppers, diced tomatoes, peanut butter, chopped jalapenos, chopped dark chocolate, and chicken broth and mix everything well. Keep stirring everything until it becomes smooth and your sauce starts thickening. Strain your sauce once done and keep it aside.

• Cook your chicken in the sauce:
Now add 1 tablespoon olive oil in a pan over medium heat. Allow it to get hot. Once hot, you have to add the chicken pieces to the oil. Roast the chicken until it becomes crispy and brown. Now you will have to add the sauce that you have made straight into the pan and make sure that you coat the chicken pieces well. In the pan, add remaining chopped bell peppers and cook them until they soften. Be certain that the chicken is moist and well-cooked. Once done, keep it aside.

Prepare the Rice:
Time to prepare the rice. So, take a clean pan and add olive oil over medium heat. Once the oil gets hot, add chopped green chili, chopped capsicum, chopped onions to it. Now time to sauté everything well until your onions are tender and brown. Add rice alongside the water. Mix everything. Simmer for 10 minutes or so. Season the rice with salt and chili powder as needed, and cover using a lid. Take the pan off the flame once cooked.

• Your chicken mole and Mexican rice are ready to be served.
