• Finely chopped flat-leaf parsley 1 tablespoon
• Finely chopped onion 1
• Ground chicken 300 grams
• Bread crumbs 2 tablespoons

• Peeled and chopped carrot 1 (1-2-inch chunk pieces)
• Chopped celery 2-3 stalks (1-2-inch chunks)
• Bay leaf 1
• Nutmeg powder, just a pinch
• Parsley 1 tablespoon
• Roughly chopped white onion 1
• Mashed garlic 7-8 cloves
• Whole mixed peppercorns 5-6
• Chicken legs 2 pieces
• Roughly chopped spinach 2 cups
• Water 2 liters
• Salt and pepper according to your taste
Method to follow for making this delicious meatball and soup recipe:
For the chicken meatballs:
First things first. Prepare your chicken meatballs while the chicken stock is simmering. Mix the egg, ground chicken, breadcrumbs, onion, and flat-leaf parsley well.
Don’t forget to season it. If needed, you can adjust the seasoning later. Form tiny-sized meatballs. Keep them in the refrigerator until your chicken stock is done completely.
For the soup:
You will have to clean the legs of the chicken properly. Take a stockpot. Now add a little bit of oil to it and start sauteing the chopped garlic, onions, the bay leaf, and pepper. You have to add the celery and carrots at this point. Don’t forget to add your chicken leg pieces and sauté them lightly. Add water and let it boil and then lower to a simmer. Make sure that you skim the impurities and froth, which form on the stock’s surface.
After 30-40 minutes of simmering, the legs of your chicken will be cooked. Remove it from your stock and let it cool. Shred the meat off your chicken and keep it for another use. However, you can add it to the soup before serving.
Don’t forget to put the chicken bones back into your stock and simmer again. Your stock would possibly require another 30 minutes to get the headiness of a skillfully flavored chicken soup.
Taste the chicken soup right after 30 minutes and season it accordingly. Time for scooping the solids out with the help of a slotted spoon and remove. Strain your stock and return to the oven, turn the heat on and add your chicken meatballs Cook them for about 6-9 minutes or until they are cooked properly.
