Ingredients and their proportions:
For the cake:
• Cake flour 32/3 cups or 450 grams
• Granulated sugar 2 ¼ cups or 480 grams
• Kosher salt 2 teaspoon
• Baking powder 2 teaspoon
• Whole milk 1.5 cups or 355 ml
• Egg whites 8 large, room temperature
• Vanilla extract 1 tablespoon or 15 ml
• Sour cream 1/3 cup or 80 ml
• Unsalted butter 17 tablespoons or 240gram
For the milk mixture:
• Whole milk ¾ cup or 177ml
• Sweetened condensed milk 14 oz or 397 grams
• 354 ml evaporated milk
For the frosting:
• Cold, heavy whipping cream 3 cups or 710ml
• Vanilla extract 1 teaspoon
• Mascarpone cheese 8 oz, room temperature
• Confectioner’s sugar 1 cup
For the assembly:
• Mint 1 sprig
• Hulled and sliced strawberries 9
Instructions to follow for baking your cake:
First, you will have to preheat your oven to 350 Fahrenheit. Now prepare a cake pan and add parchment paper.
Take a standing mixer. Now sift in the baking powder, sugar, salt, and flour. Give it a nice whisk and keep it aside.
Take a large-sized bowl. Now add sour cream (Milk yogurt can even be used instead of sour cream), vanilla, milk, and egg whites. Whisk everything together.
You need to attach a paddle attachment to your stand mixer. Now add butter in pieces or cubes.
Beat half of your wet mixture into your dry crumby mixture. Scrape your bowl and add the rest wet mixture. Make sure you beat until everything is well-combined.
Pour your cake batter into a sheet cake pan that you’ve prepared earlier.
Bake it for around 40-50 minutes.
Let it cool properly.
For the syrup:
Add the three types of milk into a bowl. Whisk everything together and keep it aside. You can also add more milk for cutting the sweetness.
For the frosting:
Add confectioner’s sugar and heavy whipping cream to your stand mixture. Make sure the whisk attachment is there.
Beat it until whipped properly.
Time for adding vanilla extract. Don’t forget to give it another round of whip.
Now fold in mascarpone cheese by hand with the help of a spatula.
For the assembly:
You can trim the top and the sides of your cake if you want a nice edge. But this makes your cake more absorbent.
Poke holes all over your cake for making more room for your milk mixture.
You can use a scooper for adding the frosting.
Smooth it with a spatula.
Garnish your cake with strawberry slices and mint.
