Egg fried rice is a perfect recipe for occasions such as family get-togethers, kitty parties as it’s super easy to cook. It is filled with vegetables and is highly nutritious. Ingredients required for this recipe are- (6 SERVINGS)
· 2 cup basmati rice
· 2 medium onions
· 2 small capsicums (green pepper)
· 2 green chilli
· 4 tablespoon soy sauce
· 3 teaspoons refined oil
· 8 eggs
· 2 large carrots
· 1/2 tablespoon black pepper
· 2 tablespoon tomato puree
· 4 pinches salt
For Garnishing
· 1 handful chopped coriander leaves
Step 1 – Parboil the rice
Take a bowl and put down 2 cups of rice in it. Wash the rice properly in the cold running water 2 to 3 times. Once it is done, boil the rice and keep it aside.
Step 2 – Chop all the veggies
Now, take some vegetables like carrot, capsicum, onion, chillies and others whatever you wish. Wash them properly and finely chop them. Once done, take a grinder and grind green chillies to a fine paste. Make sure that you soak the vegetables in lukewarm water with a pinch of salt so that the vegetables are free from adulteration.
Step 3 – Saute the chopped vegetables
Next, take a pan, put some oil in it and heat it over medium flame. When the oil is hot enough, add chopped onions and stir fry on high flame for 2-3 minutes. Once the onions are started turning translucent, add the remaining vegetables and cook on high flame for around 5 minutes. Keep stirring and then add green chilli paste, salt, tomato puree and soya sauce and keep the flame high.
Step 4- Stir fry the eggs like bhurji
Take another pan and add a tablespoon of oil or butter to it. Now, break all the 8 eggs into the pan and stir-fry for 4 to 5 minutes. Mix well properly and add the bhurji (scrambled eggs) to the pan in which you sauteed the vegetables (step 3)
Step 5 – Add boiled rice and toss it well, and serve
Finally, add boiled rice to the pan and toss well for 3-4 minutes. You can garnish it with coriander leaves which will enhance the taste of this dish. Now, your dish is ready to serve.

Tips
