Gujiyas are often related to festivals. They are deep-fried sweets with delicious coconut fillings. Do try out this recipe with an amazing fusion of coconut and dry fruits. It only takes 30 to 40 minutes to prepare and also it can be stored for up to 2 weeks in an airtight container. For making Gujiya let’s look at its ingredients-
· 250 gm all-purpose flour
· 2 cup virgin olive oil
· 150 gm shredded coconut
· 2 handfuls mixed dry fruits
· 2 tablespoon ghee
· water as required
· 1 cup powdered sugar
· 1 teaspoon powdered black cardamom
Step 1- Prepare the dough
Firstly, you need to crush the dry fruits into small pieces. For preparing this delicious recipe, take a large bowl and a little flour in it with some melted ghee. Mix it in one direction. Then, add water gradually to form the stiffer dough. At last, keep the bowl aside for 10 to 15 minutes by covering it with a moist cloth.
Step 2- Prepare the coconut stuffing
Now, for preparing the coconut stuffing take a pan and heat it on low to medium flame. Then add crushed coconut to it. For 2 to 3 minutes fry the coconut and add powdered sugar to it. Stir the mixture for a couple of minutes and then add some cardamom powder along with the crushed dry fruits. Mix it properly and cook for 1 to 2 minutes. Then, transfer the stuffing to a different bowl and keep it aside.
Step 3- Divide dough into balls
Next, you need to divide the dough and make small balls. Then, press the balls made with the palm of your hands and then roll them out using a rolling pin into small pooris.
Step 4- Roll out and stuff the mixture
On the Gujiya mould, place the rolled out dough and add 2 tablespoons of stuffing in the centre. Apply water or a little oil on the edges and close the mould. Press it tightly and remove the excess dough from all the sides. After giving it a proper shape remove the Gujiya from the mould and place it on the plate. The same process is to be repeated with the leftover dough.
Step 5- Fry the Gujiyas
Now, take a pan (deep bottomed) and heat it over medium flame. Add some olive oil to it for frying. When the oil is hot enough, then carefully place the prepared Gujiya into the oil and fry from both sides till it is golden brown.
Step 6- Serve!
Once the gujiyas are fried and completed, then transfer them on a plate lined with absorber paper to remove excess oil. Now, place them on a serving tray and serve it by decorating with some dry fruits on the plate.
