The ingredients required for soya bean cutlet are as follows- (SERVING- 5)
· 2/3 cup and 1 and 1/4 tablespoon chana dal
· 5 Kashmiri red chilli
· 7 and 1/2 black pepper
· 1/2 cup and 2 tablespoon mayonnaise
· 2 and 1/2 teaspoon kasoori methi powder
· 2 and 1/2 teaspoon garam masala powder
· 1 and 1/4 cup cornflour
· Salt As required
· 1/2 cup and 2 tablespoon onion
· 2 and 1/2 black cardamom
· 2 and 1/2 cup soya chunks
· 2 and 1/2 teaspoon red chilli powder
· 2 and 1/2 teaspoon chaat masala
· 1 and 1/4 cup refined oil
· 2 and 1/2 cup semolina
Step 1
To prepare this simple recipe firstly, take some soya chunks and soak them in a large bowl for about half an hour. Then, take a pan, add some water and a bit of salt to it and heat it on medium flame. Once the water has reached its boiling point, then add the soya chunks in it and boil it for around 10 to 12 minutes. Once it is done, keep them aside.
Step 2
Nextly, take another pan and heat a little oil in it over medium flame. Once the oil is hot enough, add black cardamom, cumin seeds, whole red chillies and black peppers in the pan and stir them. Then, add some sliced onions to the pan and cook for some minutes. Once the onions are roasted, add chana dal to it. Stir well the mixture together and then add some salt, turmeric, garam masala and red chilli powder to the pan.
Step 3
After it, squeeze the boiled soya chunks and add them to the pan of chana dal (used in step 2). Mix well the mixture and the seasonings and cook for about 3 to 5 minutes. Then, turn off the flame and keep the mixture aside to cool down. Once done, add the entire mixture into a grinder and grind to coarse it for making the cutlet.
Step 4
Then, take out the mixture (step 3) in a bowl. Now, make small patties and taking some amount of this coarse mixture. Repeat the process to make such more patties. Take another bowl and mix semolina and cornflour in it and keep them aside until required.
Step 5
For frying these cutlets, take a pan add a little oil and heat it on medium flame. Dip each patty in the semolina and cornflour mixture and shallow fry it. Repeat the procedure to make more cutlets. You can also use Tawa or a griller to make the cutlets. Make sure that you take little oil and not much because these are supposed to be shallow fried.
Step 6
For making the dip, you can mix mayonnaise, chaat masala, and red chilli powder and kasoori methi.
