You can prepare this on special occasions as well. Try out this easy recipe of Panjiri in few simple steps and amaze everyone with your cooking skills.

Let’s look at its ingredients (For 10 people )

· 333 grams ghee
· 1 and 1/4 cup sugar
· 4 tablespoon cashews
· 1 and 2/3 tablespoon watermelon seeds
· 3/4 teaspoon spice cardamom
· 333 grams of wheat flour
· 3/4 cup and 1 and 1/4 tablespoon almonds
· 1 and 1/4 cup lotus seed
· 1 and 2/3 tablespoon melon seeds
· 1 cup and 2 and 1/4 tablespoon pistachios

Step 1- Roast nuts, almonds and cashews for a minute

Firstly, for making this Panjiri recipe you need some ghee in a flat- bottomed frying pan. Heat the pan to a high-medium flame. Once, it’s heated add some nuts, cashews and almonds in it. Start roasting them for at least 1 to 2 minutes. After it, transfer the roasted dry fruits into a bowl and keep them aside.

Step 2- Deep-fry the lotus seeds for 5-6 minutes until crispy

Now, in the same fry pan add some more tablespoon of ghee in it. Also, add some lotus seeds and shallow fry them over low to medium flame. After 5 to 6 minutes when they are crispy enough, transfer them to the same bowl where roasted dry fruits were kept (in step 1). Then, using a grinder jar, coarsely grind lotus seeds, cashews and almonds together.

Step 3- Roast the wheat flour for 6 to 7 minutes and add all other ingredients to it

Now, next, you have to take a kadhai and preheat one cup of ghee in it. Add some wheat flour in it and roast it for 6 to 7 minutes until it turns golden brown. To it, add some cardamom powder, crushed pistachio, melon seeds and watermelon seeds. Roast them for around another 5 minutes or so. After it, add the entire mixture of cashew nuts, lotus seeds and almonds which you kept aside. Then stir the entire amalgamation in one direction and roast it properly for a good 6 to 7 minutes. At last, mix some sugar to the result and remove the heat.
Let the mixture cool down and your Panjiri is all ready to eat.

Tips

  1. To make more delicious Panjiri, toss the flour in a single direction till it turns golden in colour.
  2. To give your Panjiri a nice flavour, you can add some saffron strands.
  3. You can add little or more sugar according to your taste.
