Monsoon is a time when people munch on having some chatpata and fried snacks. Of all the snacks, Samosa is my all-time favourite snack which you can enjoy in any season. Traditionally this dish was prepared with potatoes, some spices and Samosa sheets. Now, over time there have been many innovations in the cooking style and people are showing their creative aspects by adding different ingredients into it. Egg Samosa is something different which you couldn’t have thought of. It is a mixture of potatoes, eggs, onion seeds, green chillies, baking powder, and other spices as well.
Samosa with tea is a wonderful combination that is enjoyed by all age groups. Adding egg in it would add up different flavours to your taste bud and you will love it for sure.

Ingredients required to make Egg Samosa are: (SERVINGS-6)
· 6 eggs
· 1 cup grated potato
· 3 finely chopped green chilli
· 1/2 teaspoon baking powder
· salt as required
· 4 finely chopped onion
· 1/2 teaspoon onion seeds
· 1 bunch coriander leaves
· 300 gm all-purpose flour
· 2 cups refined oil
Follow these simple steps to make different and delicious Samosas filled with egg.
Step 1- Prepare the dough for Egg Samosa
Firstly, take a bowl and mix baking powder, maida and salt. Add some onion seeds and 1 tablespoon of oil. Knead and mould it into smooth dough. Then, allow the dough to rest for at least 1-2 hours.
Step 2- Prepare the filling for the Samosa
Take a deep bottomed pan and heat 3 tablespoons of oil on medium to high flame. Once the oil is heated enough, then saute the onions and green chillies until onions turn golden-pink. Add the grated potatoes and chopped carrots in it. Stir-fry for a minute or two. Add salt as per your taste, and coriander leaves. Cover it with a lid and cook for 5-7 minutes or till the potatoes are soft and mushy. Now, break the required eggs into the pan and cook until the eggs are done. Remove the pan from the stove and allow it to cool for some time.
Step 3- Prepare small puris or balls and stuff them with egg-potato mixture
Now,once the mixture is prepared make small balls of the dough and roll them into thin and small chapatis. Place one to two tablespoons of the egg mixture and shape them into small/medium triangles. Seal the edges of the Samosa with little water.
Step 4- Deep-fry the Egg Samosa and enjoy it with ketchup
Again take a deep-bottomed pan and heat oil in it over medium flame. Once the oil is hot enough, deep-fry the prepared Samosas in small batches until it turns golden brown. Remove and drain excess oil with tissue paper.
Serve hot with the ketchup, onion rings and the chutney of your choice!
