Have you ever visited Taiwan? Yes? Have you tried Fengli Su or Taiwanese pineapple cake there? If, no, then you have missed the best thing found in Taiwan.

Pineapple cake or Fengli Su is one of the most sought-after souvenirs to receive and give from Taiwan. If you or your family members, or friends ever make a trip there, make sure upon your or their return, delicious pineapple cakes are bought. Everyone loves this dessert since it is buttery shortbread pastry with tangy and sweet pineapple filling.


However, the best part is that you can make it on your own. How? Follow our recipe.

Ingredients and their proportions:

For pineapple filling:

• 1 ½ cup Crushed pineapples
• Brown sugar ¼ cup
• Cane sugar ¼ cup
• Lemon juice 1 teaspoon

For shortbread/pastry dough

• Softened butter ½ cup
• Cake flour 1 ½ cup
• Powdered sugar 1 tablespoon
• Salt 1 pinch
• Egg yolks 2
• Condensed milk 2 tablespoons

Instructions to follow:

To make the pineapple filling:

You need to combine all the ingredients for the filling into a pan and on medium flame, cook the filling.
Stir the mixture often as it prevents burning. You need to cook it for around 15 minutes. Make sure very little amount of liquid is left in your pot.

Cool the filling mixture.

Now take a bit of the cooled mixture and give it a shape of a ball. Make around 20 balls out of the mixture.

For shortbread/pastry dough:

First things first. Combine powdered sugar and butter and mix until it becomes fluffy and well combined.

Add a pinch of salt, condensed milk, and egg yolks. Mix it until it is combined well.

Now time to add cake flour gradually. Mix it well. One might use a more or little less than the actual proportion. The dough is completely ready if it pulls away from the bowl. It might be a little sticky. However, it is alright.

Wrap the dough using a plastic wrap. Allow it to rest for around 30 minutes in the refrigerator.

Assembly:

Time to take your dough out of the fridge. Don’t forget to knead it a bit.

Portion your dough into 20 pieces and roll them into balls. Ensure that your dough balls are slightly bigger than the filling.

Now flatten the dough ball between the hands and then place your dough on top of the thumb and index finger.

Put the filling inside the dough. Wrap your dough around the pineapple filling.

For smoothing out your dough, you need to roll the ball between the hands. Place that ball inside a mold (preferably rectangle). Use your palm to push don gently until your cake has entirely filled up your mold.

Bake your shortbread for around 10 minutes at 3500 Fahrenheit. After 10 minutes of baking, take out your shortbread and flip each shortbread over cautiously. Bake them for another 10 minutes.

Take a cooling rack to cool your pineapple cake. You can enjoy the cool or warm cake. You can even store it in an airtight jar for a week.
