This recipe is originally a part of French cuisine. However, now it is quite popular all across the globe. Most of the hotels and restaurants have this dish as part of their menu.

Ingredients and their proportions:
• 500 grams fish cleaned as well as wiped (haddock, cod, or any white fish can be used)
• 7-8 chopped garlic gloves
• 1 onion cut into halves
• 1 tablespoon oil
• 1 thinly sliced capsicum (small)
• Salt to taste
• White pepper powder according to taste
For making the white sauce:
• 2 tablespoon all-purpose flour/ wheat flour
• 2 tablespoon butter
• 3 cups milk skimmed or whole
• Salt to taste
• 1 bay leaf
• ¼ teaspoon nutmeg powder (freshly ground)
• Pinch of white pepper powder
For garnishing:
• Parmesan cheese
• 1 tablespoon cream
Instructions to follow for preparing the dish:
First, heat oil. Then add chopped garlic to it. Sauté the garlic properly.
Now add onions. Sauté it for a minute or so. Don’t brown the onions.
After that, add capsicum. Sauté it as well for a minute.
Time to add fish. Cook the fish for around 8-10 minutes. You need to adjust the timing based on the fish type you are using.
Now add white pepper and salt as per your taste. Keep in mind that the sauce would even have pepper and salt. Therefore, add accordingly to balance the taste of the dish. When your fish will be cooked, keep that aside. Start preparing the white sauce.
For making the sauce, take a heavy-bottomed pan. On slow flame, heat butter.
Now add the flour to the butter, and mix it well.
Stir the flour for around 4-5 minutes till you get a nice fragrance from the mixture. But make sure that you don’t prepare the sauce over high flame otherwise the flour will turn brown.
Switch off the heat. Add milk. Make sure you stir continuously so that no lumps are there.
Once you mix the milk and flour nicely, turn on the heat. Now add white pepper, bay leaf, salt, and nutmeg. Keep stirring the mixture. Simmer for about 6-7 minutes till the milk starts boiling and then switch off the heat. It needs to be a creamy smooth sauce. So, discard the bay leaf.
Time to add the fish to the white sauce. Simmer again on a slow flame for about 2-3 minutes.
Your fish in white sauce is ready.
You can garnish it with cream and cheese.
You can serve this fish with any type of rice or bread.
