For the soup, you need to first make a spice paste. Take a blender and blend asafoetida, cumin powder, ginger, and garlic well. When you get a fine paste, keep it aside.

Take a large pan. Over medium flame, heat vegetable oil. Once the oil gets hot, you need to add the paste of the spices to the oil and stir it for about 5-6 minutes until the raw smell of the spices goes away. Now time to add chicken stock in the same pan and over low flame bring it to boil for around 12-15 minutes. You have to add the chicken and simmer for around 10-15 minutes over low flame. Take out the chicken thighs from the stock because you will have to shred them.

Step 3:

It is time to boil noodles. Take a deep bottomed pan. Over medium flame, boil the noodles. Once the noodles get boiled, drain the water and transfer the noodles to a separate vessel. Take the pan that you used for preparing stock and then add chopped carrots to that. Cook the carrot for 5-6 minutes over low flame.

Step 4:

Serve the rice noodles in a bowl alongside the shredded chicken. Now time for pouring the stock on top of it. So, your yummilicious chicken thukpa is ready to be served.
