Ingredients required for making these diet cookies are:
· 1 cup and 2 tablespoons buckwheat (kuttu)
· 1/3 cup and 2 teaspoon tahini
· 1/2 teaspoon baking soda
· sesame seeds As required
· 1/3 cup and 2 teaspoon maple syrup
· 3/4 cup almonds
· 1 and 1/2 teaspoon vanilla essence
Follow these simple steps to make these amazing gluten-free cookies-
Step 1- Prepare the mixture of tahini-maple syrup
Firstly, to prepare these delicious cookies, take a bowl and mix some maple syrup, tahini and vanilla essence in it. Also, mix in it some ground almonds until fully combined. Make sure that they are fully combined and no lumps are remaining in your mixture.
Step 2- Prepare the biscuit dough
In a separate bowl, combine the sifted buckwheat flour and some baking soda. Add the mixture to the tahini mixture (in step 1) in 3 batches. The mixture should be thick and sticky so it would be best to use your hands.
Step 3- Make cookies with the dough
Now, you have to divide the dough into 12 even pieces. Once it’s done then roll each piece into a ball and dip it in a plate of sesame seeds (if using). After it, press the ball down with a bottom of a glass to create a 1⁄2 cm thick 5 cm (2 in) diameter disc.
Step 4- Place the cookies in the refrigerator
Once you get all the discs coated in sesame seeds put them into the fridge for about 40 to 50 minutes. After it’s 30 minutes in, pre-heat the oven to 175° C / 350° F.
Step 5- Bake the cookies in the oven for 10-12 minutes
Bake the cookies in a hot oven for 10-12 minutes. Remove the cookies from the oven. Now, let the cookies cool down completely before eating and transfer them to a cooling rack.
Tips
- You can also store these cookies in the refrigerator in an airtight container.
- In case you cannot find buckwheat flour you can use wheat or all-purpose flour.
- If you prefer a nutty flavour, you can choose to sprinkle coarsely ground almonds on the biscuits instead of sesame seeds.
