This Apple Pie recipe is a hidden gem. The filling was inspired by Grandma Ople’s delicious apple pie. The filing approach is unusual, but it will win you over. It’s totally worth the extra 5 minutes, and you’ll never go back to using canned apple pie filling.

To create a pie, you don’t need any special tools. If you don’t have a food processor, cut the butter into the flour with a pastry blender until pea-sized bits form, then add 6-8 Tbsp ice-cold water, folding it in with a spatula between additions. It’s a piece of cake!

INGREDIENTS

PREP TIME: 20 mins
BAKE TIME: 40 mins

● 1/2 cup sugar
● 1/2 cup packed brown sugar
● 3 tablespoons all-purpose flour
● 1 teaspoon ground cinnamon
● 1/4 teaspoon ground ginger
● 1/4 teaspoon ground nutmeg
● 6–7 cups peeled tart apples, thinly sliced
● 1 tablespoon lemon juice
● Dough for double-crust pie
● 1 tablespoon butter
● 1 large egg white
● Additional sugar.

INSTRUCTIONS

● Preheat the oven to 375°F (190 degrees Celsius). In a small mixing bowl, combine the sugars, flour, and spices; set aside. Combine the apples and lemon juice in a large mixing bowl. Toss to coat with the sugar mixture.
● Roll one half of the dough to a 1/8-inch thick circle on a lightly floured surface; transfer to a 9-inch pie pan. Trim with a rim if necessary. Add the filling and a dot of butter on top. Roll out the rest of the dough into a 1/8-inch thick circle. Place on top of the stuffing. Edge should be trimmed, sealed, and fluted. Slits should be cut at the top. Brush the egg white over the crust when it has foamed up. Sugar it. Wrap a piece of foil over the edge and secure it loosely.
● Preheat the oven to 350°F. Bake for 25 minutes. Remove the foil and continue baking for another 20 to 25 minutes, or until the crust is golden brown and the filling is bubbling. Now, you have to place on a wire rack to cool completely.

NOTES

● LEFTOVERS AND STORAGE
Leftover pie can keep for 2 to 3 days at room temperature or up to a week in the refrigerator. Before serving, reheat slices in a 350° F oven for 5 to 10 minutes.

● 6 cups is equal to how many apples?
1 medium apple generates around 1-1/3 cup of sliced apples in most cases. You’ll need about 5 medium apples to make 6 cups of apple slices. You could use the leftovers as snacks.

● How do you avoid a soggy bottom on a pie?
Allow the bottom crust to heat faster than the remainder of the pie to prevent the bottom crust from becoming mushy. To do so, preheat the oven and then bake the pie on the baking sheet.

● Allow the apple pie to cool completely before cutting into it. When you cool the pie, the liquid within thickens even more, so it doesn’t leak out into a pool when you cut into it.
