When you are in dire need of comfort and warming food; however, you want healthy and nutritious food as well, then this coconut sweet potato lentil soup along with rice is the soup to prepare. You can make it in ONE pot or even in an instant pot and that too without less than an hour using simple and easily available ingredients like coconut milk (creamy one), warming spices, red lentils, and sweet potatoes. Sounds great, right?
Well, it is a little bit spicy, cozy, and filled with veggies. Serve steamed rice with it and you would get the perfect healthy and nutritious bowl of soup for your lunch or dinner.
Ingredients and their proportions:
• Extra virgin olive oil 2 tablespoons
• Chopped yellow onion ½
• Grated fresh ginger 1-inch
• Minced garlic 2 cloves
• Peeled and cubed sweet potatoes 2
• Yellow curry powder 1 tablespoon
• Cayenne pepper ½ teaspoon or according to your taste
• Dried red lentils ¾ cup
• Water or vegetable broth 4 cups
• Salt as per taste
• Baby spinach 2 cups
• Fresh creamy coconut milk 1 can
• Cooked rice 2 cups
• Chopped fresh cilantro 1/3 cup (you need more to serve)
Instructions to follow for making this super delicious yet healthy soup:
Take a large pot first. Over medium flame, add olive oil to the pan and let it heat up. When your olive oil shimmers, then you will need to add the chopped onion. Cook it for around 5 minutes or until soft. Time to add garlic, ginger, and sweet potatoes. Cook everything for 2 minutes or until fragrant. Add cayenne powder and curry powder to the pan and stir well. Cook everything for another 1-2 minutes.
Time to add the lentils and the broth as well. Generously season with salt. Over a high flame, bring the mixture to a boil and then reduce the flame to low. Now cover, as well as simmer, for about 15-20 minutes or until your lentils are soft enough and the sweet potatoes become tender.
Add spinach and the fresh coconut milk to it and cook for 5 minutes. Remove the pan from the heat. Time to add cilantro.
For serving, put some rice in bowls and just ladle your soup overtop. You can garnish it with cilantro. Have it with naan.
Set your instant pot for sauteing. Add olive oil, as well as onion. Cook the onion for 5 minutes or until it gets soft. Add the garlic, ginger, and sweet potatoes for another 2 minutes or until it becomes fragrant. Add cayenne and curry powder and cook for a minute.
Add vegetable broth and lentils. Add salt to it. Now cover, choose the manual setting. Cook for 10 minutes on high pressure.
Once your cooking is done, use the release function and start releasing the steam. Set your instant pot for sauteing. Stir in the spinach and coconut milk and cook it for 5 minutes. Turn off the instant pot. Stir in some cilantro.
Put some rice in a bowl and pour your soup overtop.
