YES! You read the title correctly! A burger that is completely healthy and full of nutrients with a yeast-free burger bun but without having a patty in it!

Firstly, we eat food by our eyes as we all know i.e. By looking at how the dish is presented and then actually eat it with our mouth” correct?! The first impression of the food is always presentation. Especially small kids don’t love to eat the daily meals prepared at home as they don’t look attractive.

So even I used to not like to have some dishes as they did not look good to eat or its taste was not yummy. Here we introduce “DUDHI MUTHIYA” or “BOTTLE GOURD MUTHIYA” as one such dish. MUTHIYA is a Gujarati dish that is made from bottle gourd, wheat flour, and Indian spices. So these didn’t look very attractive and its taste was a bit mild so I thought why not make something interesting with it! This dish which I am going to make resembles the burger and of course this a fusion dish but a very nutritious one. Let me introduce the name of the dish and that is “VEGGIE BURGER WITH DUDHI MUTHIYA BUNS” the burger buns are nothing but dudhi muthiya!

So let’s quickly make this interesting dish:

INGREDIENTS:

For burger buns:


1 ½ cup sorghum ( jowar flour)
¼ cup of rice flour
¼ cup chickpea flour
1 tsp salt (as per taste)
½ tbsp. ginger garlic paste
¼ tsp crushed carom seeds (ajwain)
1 ½ tsp coriander powder
½ tsp cumin powder
1 tsp chilli powder or more as per taste
¼ tsp turmeric powder
1 tbsp. sesame seeds for sprinkling on the burger buns
¼ cup coriander leaves
¼ tsp baking soda
2 ½ cups of grated dudhi (don’t throw dudhi water)

For veggies:

A bunch of Lettuce leaves
1 large sliced tomatoes
1 large sliced onions
1 medium sliced capsicum

INSTRUCTIONS:

Take a mixing bowl, and add all the dry ingredients from flour to spices and mix well everything.

Afterward, add grated bottle gourd and little water of about 2 tbsp. to make a semi-soft dough out of it. Make sure that you use that leftover dudhi water as it is more nutritious and gives a good flavour.

Make dudhi muthiya in a burger bun shape and put them to steam in a vessel for about 15-16 minutes.

After it gets cooled completely, put a grilling pan on the stove and grill those buns by drizzling some oil on it.

For assembling, place a burger bun on a plate, then place some lettuce on it then add all the veggies i.e. tomatoes, onions, capsicum on it, and cover it with another burger bun, and there you go with your DUDHI MUTHIYA BURGER which is ready to enter your tummy.

NOTE:

Don’t add much baking soda else buns will get cracks on the top. Adjust the quantity of water as per the quality of the flour used to make a semi-soft dough.

And as there are already many spices in the buns there is no need for any dips or patty.
