You have probably heard about how diverse Kerala is in the south of India. Kerala is divided into about equal regions, with Hindus, Christians, and Muslims occupying the majority of the population.
This has influenced the state’s history, particularly its gastronomic history. When it comes to food, each region and religious community in the region has its own speciality. Many of these recipes are well-known and well-loved throughout the state. Vendakka Mappas – Kerala Style Okra Curry with Coconut Milk is one of these recipes. This cuisine is primarily from the Malayalee (Kerala) Christian community. Malayalee Christians, who eat meat and seafood throughout the year, fast during Lent. During this time of year, a number of vegetarian foods appear.
INGREDIENTS

Ingredients:
● Okra, 250 g ( chopped into bite-size pieces)
● ½ cup thick coconut milk
● 2 cups thin coconut milk
● 4 tbsp oil
● 2 medium onions (finely chopped)
● 25gm ginger (julienned)
● 1 medium-size tomato (roughly chopped)
● 2 green chillies (slit in half)
● 2 tbsp coriander powder
● ½ tsp pepper powder
● ¼ tsp garam masala
● ¼ tsp turmeric powder
● Salt to taste
INSTRUCTIONS
● The okra must be washed and dried. To ensure that the okra does not become slimy, it must be thoroughly dried.
● Cut the okra into 1 or 12 inch segments after trimming the ends.
● In a skillet, heat some oil and cook the okra until it begins to brown and crisp on the edges. Cook until the mixture has thickened and is no longer sticky.
● Remove the items from the table and set away.
● In a large skillet, heat the oil and add the onions, ginger, and green chilies. To make the onions transparent, fry them until they are translucent.
● Reduce the heat and stir in the turmeric and coriander powder. Fry until the masala’s uncooked odour has dissipated. Sauté the tomatoes, which have been coarsely diced.
● Season with salt and add the cooked okra to the mix.
● Add the thin coconut milk, pepper, and garam masala. Bring the mixture to a boil.
● Remove from heat, add the thick milk, and gently stir the mixture.
● Serve with buttered rice or toast.
Tip: If you add meat to the stew, it will become a “meat and Okra stew.”
NOTES
● Is It Possible To Get Rid Of Okra Slime?
Because it is believed that cooking okra quickly removes its slime, most people prefer fried, grilled, or roasted okra.
● Most people’s main worry while cooking with okra is avoiding slimy okra. To achieve this, it is critical to pat dry the okra after washing it. Sauteing simply the okra in oil until it browns along the edges also prevents the okra from getting slimy throughout the cooking process.
● Don’t overcook the coconut milk. It’s possible that it’ll split and spoil the curry totally. Cook till steam rises from the curry after adding the coconut milk.
